「授業参観」は英語では class observation day や classroom visitations などで表現することができます。

My mother always comes to classroom visitations, but today my mother is at work, so my father will come instead.

「じゃあ、行ってきます」は英語では Then, I'm leaving. や Then, I'm going. などで表現することができます。

※ pick up（車で迎えに行く）
