IでもWeでも文法上どちらでも良いです。ただ、会社としてクライエントに謝罪する場合はweのほうが適切だと思います。

ちなみに、「天候上の理由でスケジュールが遅れている」は英語で以下のように表現することができます。
We are behind schedule due to the weather.
「天候のせいでスケジュールが遅れている。」
*behind schedule 予定より遅い　↔ahead of schedule 予定より早い　*due to~ ～のせいで

We have fallen behind because of the weather.
