「究極の選択」は英語では ultimate choice や ultimate decision などで表現することができます。

I was suddenly faced with the ultimate choice that quit my job or go overseas.

買い置きする を英語で教えて！

「買い置きする」は英語では stock up on を使って表現することができます。

I've stocked up on detergent so it's okay.
（洗剤は買い置きしてるから大丈夫。）
※ detergent（洗剤）

I'll probably be too busy to go shopping next week, so let's stock up on foodstuffs today.
（来週はたぶん忙しくて買い物に行けないから、今日、食料品を買い置きしよう。）

「スタメン」は英語では starting line-up と表現することができます。
※ starting member は個々の選手に対して使われます。

（今はチームの調子が良いから、スタメンは出来るだけ変えない方がいいと思います。）

「素敵なご夫婦ですね」は英語では You guys are such a lovely couple. や You guys are a wonderful couple.
などで表現することができます。

「できる人」は英語では capable person や go-getter などで表現することができます。

He's a capable person, so unless it's something special, he'll do whatever you ask him to do.
（彼はできる人だから、特殊なことでなければ、何をやらせてもやってしまうよ。）

He's a go-getter, so I don't think it's a problem to put him in charge of this project.
（彼はできる人だから、今回のプロジェクトは彼を責任者にしても問題ないと思う。）
