「志」は英語では ambition や aspiration などで表現することができると思います。
また dream などで表現するのもいいと思います。

「子供は正直」は英語では children are honest や children are sincerity などで表現することができます。

Children are honest after all.
（そもそも子供は正直だよね。）

Children are inherently less experienced and knowledgeable than adults, so they are not good at hiding their emotions, so I think they are sincerity.
（子どもは大人に比べて経験も知識も少ないので、感情を隠すのが苦手なので、正直だと思います。）
