僕も英語は始めた際は、初心者からです。

手に余る を英語で教えて!

I have my hands full
または、
leave me with little spare capacity

※上のHaveの表現は、使役動詞という文法を使い、
　〜にしてもらうなどのニュアンスを出すことができます。

The task is so complex that I have my hands full.
または
The assignment is quite intricate, leaving me with little spare capacity.

※quite は強調を表す単語で、他にも、very, so, really, などがあります。

手では折れない を英語で教えて!

not easily by hand
または、
not easily breakable

「手では折れないと思うよ」を文章にしてみますと、
I don't think it will break easily by hand.
または
I believe it's not easily breakable with bare hands.

※breakと動詞で使うもの良いし、breakableと形容詞の使い方でもいいと思います。
　ーableはできるという意味を表す接尾語になります。

手ごわい相手に当たる を英語で教えて!

a formidable opponent
または、
a tough adversary

少し難しい表現になりますね。
特に大事な単語は、opponentです。相手という意味です。

「手ごわい相手に当たったので負けが確定した」と文章にしますと、
I was up against a formidable opponent, so the defeat was inevitable.
または
I encountered a tough adversary, and that sealed my defeat.

手触り を英語で教えて!

手触りの良いを英語で言いますと、
with a nice texture
または、
pleasant to the touch

※textureや、touchは、肌触りという意味になりますね。
　日本でもテクスチャーは使うと思います。

I prefer a towel with a soft and plush texture. I want a towel with a nice texture.
柔らかくふんわりとした手触りのタオルが好きです。
手触りの良いタオルが欲しい。

I enjoy the sensation of a towel that is smooth. I'm looking for a towel that feels pleasant to the touch.肌になめらかのような感触のタオルが心地よいです。
手触りの良いタオルを探しています。

手を差し伸べる を英語で教えて!

He always lends a helping hand whenever someone is in need.
または、
He is always ready to lend a helping hand to those in distress.
彼は困っている人にいつも手を差し伸べる用意がある

一つ目の表現は、割とシンプルに作ったのですが、
helping handで、手を差し伸べるのようなニュアンスがあり、
wheneverは、いつでもと表すことのできるフレーズです。

二つ目で難しいところは、in distressで、不満や困ってるという意味になります。
