コーヒーの味は、使われる豆の種類によって変わることがあります。

Depending onは「～によって」「～に応じて」という意味で使われます。ある状況や結果が特定の要素や条件に左右されることを示す場合に使います。たとえば、「お天気によって計画が変わるかもしれません」は英語で「The plan might change depending on the weather.」となります。また、選択肢がある状況で、その選択によって結果が変わる場合にも使います。

Based on the weather, we might cancel our picnic tomorrow.
「天候によって、明日のピクニックをキャンセルするかもしれません。」

The price is subject to change based on market conditions.
「その価格は市場の状況によって変動することがあります。」

"Based on"は「～に基づいて」「～から判断すると」などの意味で、情報や事実に基づいて意見や決定を出す場合に使います。例：「Based on the weather forecast, we should bring an umbrella.」

一方、"Subject to"は「～によって変わる」「～の条件で」などの意味で、何かが特定の条件や制限に影響を受ける場合に使います。例：「The event is subject to weather conditions.」
