※「分類する」は separate や sort が使えます。
違いは以下の通りです。

separate：分ける・分離する（一つに混ざっているものを、異なる種類やカテゴリに分ける）
sort：分類する・整理する（何かをルールに基づいて分類・整頓する）

プラスチックと紙を分けてください。

ごみを種類別に分類してください。

※「ゴミ」も garbage と trash の両方が使えます。
