Come to think of it, I haven't seen John for quite a while.
「そういえば、ジョンにはだいぶ会ってないな」
「Come to think of it」は、「そういえば」「思い出したら」などと訳すことができる英語表現です。話の途中でふと思い出した事柄や追加情報を導入する際に使われます。過去の経験や情報を思い出し、それが現在の会話や状況に関連していると判断したときに使用します。また、自分自身が新たに気づいたことを表すためにも使われます。
Friend A: Did you feed the dog?
Friend B: Now that you mention it, I totally forgot. I'll go do that now.
友人A: 「犬にエサをあげた?」
友人B: 「それを言ってみるまで、完全に忘れていたよ。今、そのことをやってくるね。」

ネイティブスピーカーは、「Now that you mention it」と「Now that you say that」を同様の状況で使いますが、微妙な違いがあります。「Now that you mention it」は、話題が出てくることで突然何かを思い出す状況で使われるのに対して、「Now that you say that」は、誰かの特定のコメントや意見が新たな洞察や反応を引き出すときに使われます。

「そういえば」(by the way以外)は英語では speaking of which や come to think of it などで表現することができます。
Speaking of which, I saw you talking to someone in front of the station last night when I was returning from work.
(そういえば、昨日の夜、会社から帰る時に、駅前で君が誰かと話してるのを見たよ。)
Come to think of it, what do you think of the budget for the upcoming sales event?
(そういえば、今度の販売会の予算どう思う?)
