1. Please have more conversations with him/her instead of using the textbook.
「テキストを使うだけでなくもっと（子供と）会話をしてください」

：have conversationsで会話をするという意味です。moreを付けることでもっとという意味を付け加えられます。またテキストだけでなく（テキストの代わりに）などの意味はinstead of~で～の代わりにという熟語を使います。

2. Please let him talk a lot without the textbooks.
「テキスト無しで（子供に）しゃべらせてください」

：訳は直訳に近いものになりますが、ニュアンス的にテキストは使わずこどもに話させるようにしてという意味を含みます。
let ＋人＋ 動詞「人に（動詞）させる」という意味になります。
