「さあ、寝ましょう。」は英語で Let's go to sleep. や Then why do not you sleep? または Do you want to sleep? などで表現できます。

「サイン」（いわゆる有名人がファンにするサイン）は英語では autograph や signature , signing などになりますが、オススメは autograph です。
※名詞の sign は"有名人のサイン"としては使えません。

「サインの練習をする」は英語では practice of autograph か practice of signature などがありますが
将来、有名人になった時のためのサインの練習なので
autograph を使った方がより適しているかなと思います。

英語でもいわゆる食感の"擬音"を表す言葉は多くあり
「サクサク」は英語では crispy が最も適しているかなと思います。
※ちなみに「食感」は英語で texture で 「ふわふわ」は fluffy ,
「ネバネバ」は sticky 等、いろいろな擬音を表す英語があります。
