「in the style of …」を使うと"Ganmodoki is deep-fried tofu mixed with thinly sliced vegetables in the style of wild goose meat."で「がんもどきは、油揚げに薄切りの野菜を混ぜて雁の肉風（＝擬製）にしたものです」になります。「in the style of …」は「in imitation of ...」に置き換えて良いです。
